There are 12 blocks of Shiraz on the Elderton Estate, some as old as 100 years, which grow in deep alluvial soils over limestone. Combined with a Mediterranean climate and minimal supplemented irrigation, this creates what one can only describe as ‘the perfect Shiraz vineyard’. Mainly the grapes are machine harvested in the cool of the night, at an optimum maturity of about 14 - 15 Baume. This allows a quick delivery to the winery for crushing, before any spoilage can occur. Vintage in 2005 occurred slightly later than usual, resulting in excellent quality fruit with higher Baume, good natural acid and superb flavour. The 2005 Estate wines, particularly the Shiraz, show great balance and potential for longevity.

Château Coutet is a Premier Cru Classé from the Barsac appellation. Château Coutet is approximately 85% Sémillon and 15% Sauvignon Blanc (depending on the vintage). The grapes come from 95 acres of vines planted in red clay, sand and gravel soil, with limestone subsoil. The wines are fermented and aged for 18 months in oak barrels, emerging a pale yellow with gold reflections. A luscious, sweet white wine.

When young, the wine hints of the fine aromas of orange blossoms, citrus fruit, honey and vanilla. As the wine ages, it develops depth and warmth. A spiciness is also apparent, mingled with hints of exotic flowers and candied citrus.

An exotic, indeed even tropical fruit nose is trimmed in ample wood toast that introduces rich, full, forward and sweet flavors that possess excellent depth and density yet perhaps not quite the elegance and precision. To be sure, it could just be an early stage and that this will tighten up with time in bottle but it's unusually accessible at present. The benefit of the doubt is offered as the track record is too good not to do so.
