Chandon Blanc de Noirs is characteristically a delicate salmon color. Wild cherry, currants and strawberries dominate both aroma and flavor. These vibrant red fruit flavors linger across the palate and are balanced with lively acidity and a soft, lingering, creamy texture.

The 2007 Blaufrankisch is light purple/ruby red in color, medium bodied, dry, has moderate alcohol (just 12.2%) and juicy acidity. Flavors and aromas of spice, black pepper, plum, meat, black cherry, black raspberry, blackberry and a hint of mint define the wine. There are soft, polished tannins with wonderfully integrated oak from twelve months in older barrels and a plump, polished texture with a delicious finish. As always this is a great choice to serve with game meats, whether feathered or furred as well as sausage, pork, pates, grains, soy and dishes with Asian spices.

The exotic, full-throttle, high velocity, mouth-staining, unctuously textured, dense ruby/purple-hued 2003 Grenache Old Vines Blewitt Springs is classic southern Australian Grenache. Pushed to the limit, but not over the top, it is a spectacular wine to drink over the next 5-7 years.

The end of Winter and the beginning of Spring were mild and very dry, which favoured early budding of the vines and accelerated the vegetative cycle - until the stabilising effect of some rainfall in May. Flowering took place in the same average period as other vintages. June was very hot and this accelerated the growth of the grapes and of the vegetative cycle by about 10-12 days. The Summer months were very hot and sunny with temperatures well above average - particularly in July with long periods without any rainfall. This meant that the growth rate of the vines slowed down slightly and, on average, the grapes ripened about a week earlier than in average vintages. In all the estates a careful thinning of the red variety grapes was carried out during the month of August, in order to ensure that the remaining grapes would ripen in the best conditions.
Vinification: Merlot was harvested at mid September, approximately a week before the Cabernet Sauvignon. After destemming and light crushing, the Merlot and Cabernet Sauvignon were vinified separately; maceration took place in stainless steel tanks over a period of 15-20 days, during which time alcoholic fermentation was also completed, at a temperature never exceeding 30 °C. The resulting wine is rich in colour and very structured but soft on the palate, without any astringency. The wine were then transferred to new French oak barriques (Troncais and Alliers) where malolactic fermentation was completed by the year's end. The wine were then racked, blended and then returned to the barrels for about 14 months aging, followed by aging for about one year in bottles before release. Alcohol: 13.00% vol.
