All the grapes for this blend are from hillsides in the Napa Valley. All three districts from which the grapes come are powerful growing areas that produce loads of rich, ripe fruity Cabernet Sauvignon. These distinctive varietal grape flavors combined with oak from the barrels produce exotic spice, maple syrup, blackberry, and tobacco aromas.

Deep garnet black color color. Baked berry, grilled meat, and green pepper aromas. A plush round entry leads to a dry-yet-fruity medium-to full-bodied palate with ripe blackberry, cassis, and toasty vanilla flavors. Finishes with a long ripely sweet berry, cedar, and vanilla bean fade.

Our 2006 Cabernet Sauvignon is smooth and easy drinking. Aromas of blackberry, ripe olives and toasted oak are complemented by flavors of dark cherry with chocolate. The full body finishes long with rich chewy tannins. It's a great Cabernet for accompanying roasted beef or dishes with full flavored sauces.

The 2005 Cain Five shows the emphasis that we place on the palate feel: the texture of the tannins is extremely fine, yet distinctly present—like Shantung silk. The aromas are of fresh red cherries and exotic spices. It is gratifying to see how well this wine evolves in the open glass, which bodes well for the future. Today, you should decant the wine, and sip it carefully.

The 2005 Blackstone Cabernet Sauvignon is complex, with aromatic layers of black cherry, plum, caramel and hints of spice. The wine is full-flavored and rich, with supple tannins. Mouth-filling fruit flavors of black cherry and licorice create a lingering finish. This hearty Cabernet is the perfect accompaniment to grilled beef tenderloin with baked potatoes. It is also delicious with lamb chops and even Coq au Vin.

Forest Glen Merlot has a powerful berry and licorice nose. Its flavor has strong oak and somewhat weaker blackberry notes, with a slightly puckery acidic finish. Although we usually prefer a bit more fruit, as noted above we have a soft spot for the oaky character of this wine.
