Deep ruby color is essential. Some times it is called "deep red" or "pitch-dark" or even "black". Today's Requirements are: The wine has to be full-bodied, with a soft acidity, good fragrance and nose, and finally has to have perfect harmony in the blend.
The wine is created in as pure and natural way as possible. The soft acidity and tartness is derived from the tannins of the wine From the full bodied harmonic composition, the soft tartness, and the oak ageing, comes the final description of Bull's Blood as velvety.

Taste: A delightful wine that combines the elegance and suppleness of Merlot and Syrah with the austerity of Sangiovese. Balanced, almost musical, its a pleasure to drink from an early age and also has an aging potential of 5-8 years.

Spring Mountain may be a perfect place to grow this variety. It does awfully well here, setting a light but very even crop and coming into ripeness with textbook numbers every year. Cabernet Franc seems happy on Spring Mountain, and I am very happy with this wine, which has the distinctive and refined character that has long made it a favorite for blending with Cabernet Sauvignon. This wine is delightful now, and will benefit from a few years of bottle aging. We bottled 113 cases in 750ml bottles.

Dark red brick in color. Abundant aromas of violets and lavender mixed with vanilla and fine toasted oak. This food-friendly wine has a classic Bordeaux-style mouth-feel that is lush yet spicy, bringing out the best of the Cabernet Franc grape. The wine has a wonderful balance between elegant and vibrant fruit, ripe tannins and mark characters. The long finish is complex and very classic. While ready to drink, this wine will continue to develop with long-term aging.

The color is very dark red brick. The wine starts with vibrant aromas of violets and cassis, perfectly framed with vanilla and hints of toasted oak. This is ripe Cabernet Franc.
The mouth-feel is elegant, medium to full bodied with loads of fruit, red cherry, blueberry and prunes balanced by wonderful layers of tannins that are very typical for Cabernet Franc. The finish is very classic with fine smoke, leather and great minerality going on and on.
Serving Suggestion: This lush, complex red wine should be served at room temperature (65°) or slightly lower, and is an excellent match for any red meat preparation. It also pairs well with veal or chicken with wine sauce, duck, mushroom dishes and full-flavored cheeses.
