Composed of 97% Cabernet Sauvignon and 3% Petit Verdot, this is a rich wine, its juice carefully selected from some of California’s best vineyards. Hedonistically dark, with fantastic notes of candied plum, black cherry, and mountain berries on the nose, with hints of earth and spice. On the palate, this is an exuberant, pure Cabernet, with flavors of wild berry, plum, and molten cassis. Chewy tannins and good structure in the mouth, and a disarmingly long finish. “It takes Rutherford dust to make great Cabernet,” said legendary winemaker André Tchelistcheff. Our 2005 Beaulieu Vineyard Rutherford Cabernet Sauvignon gives proof to his statement with rich dark fruit character woven with enticing anise, cocoa, licorice, loam and dried-herb notes. “The first impression is of sweet fruit, and then the wine expands across the palate into deeper, riper layers of berries and cherries,” said Winemaker Jeffrey Stambor, as he swirled and sipped the wine. “Well-integrated oak character heightens the aromas and laces the long, fruit-imbued finish. This richly-textured Cabernet is at once approachable and age-worthy.” To bring out the rich mélange of flavors inherent in Rutherford vineyards, we destemmed the grapes and cold-soaked the must for two-to-four days for gentle flavor extraction. During the eight to twelve-day fermentation, we pumped over the cap to incorporate the flavor-rich skins into the juice. Malolactic fermentation rounded the flavors.
Vineyard Notes:
The Rutherford American Viticultural Area (AVA), just 3.3 miles long and 2 miles wide, is a tiny jewel in the heart of Napa Valley. So well suited is Rutherford to growing Cabernet Sauvignon that this single grape variety comprises 70 percent of the region’s vineyard acreage. We harvested the grapes for this wine primarily from BV vineyards on the gravelly, alluvial fan soils of the Rutherford Bench. Vine roots dig deep in their search for water and nutrients, bringing up minerals that influence their flavors. We complemented these grapes with fruit from BV vineyards just to the north, between Rutherford and St. Helena.

The 2005 vintage provided long hangtime for notably rich Cabernet Sauvignon character with balanced acidity. Heavy winter rains during vine dormancy gave way to a dry, mild March. Significant rains returned in April and May, delaying bloom and berry set. Summer temperatures were desirably mild, with few heat spikes. September’s fog and cool temperatures slowed sugar accumulation, and then perfect conditions arrived in October for a late harvest. We finished picking Cabernet Sauvignon for this wine in late October, resulting in fully-developed flavors, without excessive sugar, and silky mature tannins.
